Lemon Chickpea Feta Salad

This salad is simple, fresh, full of protein and so satisfying. Serve it as a side dish or make it a meal. Add tofu or switch out the beans to white beans instead. This is a filling, healthy meal all around.

  • 2 15-oz cans Chickpeas, drained and rinsed
  • 8 oz Feta cheese, crumbled
  • ½ cup Red onion, finely diced
  • 1/3 cup Parsley, chopped
  • ½ cup Baby arugula, chopped
  • 3 tbs Olive oil
  • 3 tbs Lemon juice
  • ½ tsp Lemon zest
  • 1 tbs Honey or agave syrup
  • ½ tsp Kosher salt
  • ½ tsp Black pepper

1. In a large bowl, whisk olive oil, lemon juice, lemon zest, honey, salt and black pepper.

2. Add all other ingredients into the bowl and toss.

3. Enjoy! Refrigerate for about 30 minutes to let the flavors mingle. It’s even better the next day.
