Keto Salmon & Roasted Asparagus

This easy one-pan dinner comes together quickly for the entire family— in just 20 minutes. The garlic butter sauce complements the fish just right, and as an added benefit it’s both keto and gluten-free. If you don’t have asparagus, feel free to substitute broccoli, cauliflower or green beans.

4 4 to 6 oz Salmon fillets

1 lb Asparagus, fresh

2 tbs Olive oil

4 tbs Butter, melted

1 tbs Garlic, minced

2 tsp Lemon juice

1 tsp Onion powder

½ tsp Salt and pepper each

1 tbs Parsley, fresh and chopped

1. Preheat the oven to 450°. Line a sheet pan with foil.

2. In a small bowl whisk olive oil, melted butter, garlic, lemon juice and onion powder.

3. Lay salmon filets in the center of the baking sheet.

4. Trim asparagus and spread out around the salmon.

5. Drizzle butter mixture over salmon and asparagus and sprinkle with salt and pepper.

6. Bake 12 to 15 minutes until salmon is fully cooked.

7. Sprinkle with fresh parsley and lemon slices and enjoy.
