Creamy Spinach Parmesan Chicken

Pair this family friendly recipe with a favorite side dish like roasted vegetables, pasta or a light salad for a complete and satisfying meal.

4 Boneless, skinless chicken breasts

2 tbs Olive oil

3 cloves Garlic, minced

4 cups Fresh spinach, chopped

1 sm jar Sun-dried tomatoes

1 cup Heavy cream

1 cup Parmesan cheese, grated

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil, chopped (for garnish)

1. Season each chicken breast with salt and pepper on both sides.

2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and sear for 4 to 5 minutes on each side or until cooked through. Remove skillet and set aside.

3. In the same skillet, add minced garlic and sauté for 1 to 2 minutes. Add chopped spinach and cook until wilted.

4. Sauce: Pour in the heavy cream, stirring continuously until heated. Add grated Parmesan cheese, sun-dried tomatoes and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.

5. Place the seared chicken breasts back into the skillet, coating with the creamy spinach Parmesan sauce. Simmer for an additional 2 to 3 minutes to allow the flavors to meld.

6. Serve chicken breasts on a bed of spinach Parmesan sauce. Garnish with fresh chopped basil.
